This Imperial Stout has been brewed to honor Alom, the Mayan god of the sky and of wood. Wood from the spanish cedar tree meets cinnamon, vanilla, cacao and chile pepper additions to create a celestially inspired and wholly beatific Imperial Stout.

Alom's Imperial Stout

Tasting Notes

Cinnamon, dark chocolate and raisin aromas meet black pepper and sandalwood on the nose, with dark fruit notes a hint of smoke also present. Full and viscous on the palate, this imperial stout offers coffee, semi-sweet chocolate and molasses flavors that give way to cinnamon, toffee and a spicy, woody quality imparted by Spanish cedar. Scoville heat slowly builds with each sip, while a soft bitterness and moderate carbonation provide counterpoint.
