Belgian-style Farmhouse Ale

Brewer/cellarman Tom Brown used to work for Trinity Brewing in Colorado Springs, a brewery famous for its saisons and for its annual saison festival. Tom wanted us to be a part of it so we brewed a very traditional, low-alcohol saison to contribute to the fest. The beer is all-grain and derives all its spicy, earthy quality from a blend of two different yeasts from the Brewing Science Institute: a highly-attenuative French saison yeast that imparts peppery spiciness and a Farmhouse yeast that adds a slight acidity and a mild earthiness.
